Joining the performance-driven Rocket Espresso Giotto line, the Premium Plus has all of the commercial components and functionality that made its predecessor a favorite with espresso enthusiasts and adds technical refinements. Among them, the chrome-plated brass E61 brew group and 1.8 liter nickel-plated copper boiler are the highlights which make this prosumer machine so well-adept at assuring temperature stability.

The upgrades to the Giotto Premium Plus have been made with a meticulous focus on precision. An integrated, commercially rated Sirai Pressure Stat offers enhanced accuracy and durability. Rocket Espresso’s Thermosyphon System has also been modified; the diameter of the copper tubes, which supply water to the brew group, has been enlarged to allow for greater water flow. In addition, the Giotto Premium Plus comes equipped with an indication warning system that alerts users when the water reservoir needs to be refilled.

The design of the flagship Rocket Espresso Giotto Premium Plus Espresso Machine retains the modern aesthetics of the original model with a few improvements, tailored to the needs of its customers. Stainless steel legs, with anti-slip feet have been added for easy cleanup. The Giotto Premium Plus also has a full, round pressure gauge display for increased visibility. Features & Benefits: Coffee

E61 Brew Group

The E61 brew group is about one thing and one thing only: heat. Proper heat, heat retention, heat stability … it’s got it all covered through its labyrinth of channels through which hot water flows, keeping everything at a consistent temperature. Its proximity to the boiler allows it to absorb radiant heat from the boiler, and the high quality metal materials hold heat well. Finally, its size as well as its material – 9 lbs, and chrome plated brass, respectively – means that it stays at a consistent temperature for long periods of time.

Thermosyphon System

The Thermosyphon System has a superior layout for optimum extraction. Unique to the Giotto Premium Plus, the system allows for 20% greater water-volume capacity than its peers.

Brewing on the Lever-Operated Brew Group

The E61 brew group is lever operated. Choose either the single or double shot portafilter, and measure out the correct amount of grounds using the included measuring scoop. Tamp the grounds down with the included tamper, and insert the portafilter into the group head. Lift the lever to start the pump and begin dispensing coffee, and once you have your desired amount, pull the lever all the way down until coffee dispensing stops and you hear the pump stop. Pulling the lever all the way down releases pressure from the brew group – you will probably see a small amount of water released into the drip tray from the brew group.

Heavy-Duty Boiler

The copper boiler is the heart of this machine, providing heat for brewing, steaming, and hot water. Nickel plated, it uses a heat exchanger system and a lead-free brass endplate for increased heat retention – Rocket Espresso is one of the few (or only) companies to use such an endplate. It holds 1.8 liters of water, so you don’t have to worry about running dry, and employs an electronic sensor to monitor the water level internally.

Cup Warmer

The copper boiler also heats the cup warmer located on top of the machine. This hot air is released through holes in the top of the machine, ensuring that your cups are heated. Brewing espresso into a cold cup causes it to lose temperature rapidly; we recommend pre-heating cups on the cup warmer or by rinsing them with hot water before brewing.

Pressure Gauge

No longer a half-moon gauge, the Giotto Premium Plus has a full, round display that allows users to easily monitor machine pressure.

Heat-Up Time

The Rocket Giotto Premium Plus takes about 8 minutes to reach proper brewing pressure, and another 5 to 7 minutes for the brew group to heat fully – altogether, about a 15 minute wait. While you can technically brew once the machine is at brewing pressure, wait until the brew group is fully heated before preparing your first shot. Only then will you pull a properly heated and extracted shot.

Features and Benefits: Frothing & Hot Water

Stainless Steel Steam Wand

The steam wand is located to the left of the E61 brew group, and employs temperature-safe anti-burn stainless steel for its construction. The knob to begin and cease steaming is located above the wand – once the machine is at brewing temperature, turn the knob to the left to release steam, and close the knob to end steaming by turning it to the right. Below the steam wand is the steam pressure gauge – the machine is at steaming pressure when the gauge measures around 1 bar. Use the steam knob to foam and steam milk, soy milk, or half and half for a cappuccino, latte, café breve, or latte macchiato. Be sure to wipe down the steam wand with a damp cloth after you’ve finished to prevent any buildup.

Stainless Steel Hot Water Nozzle

The hot water nozzle is located to the right of the brew group. Made of no-burn stainless steel, you can open the knob located above the nozzle to begin dispensing hot water for tea, a café americano, or hot cider. Below the hot water nozzle is an embossed plate with the machine’s name, “Giotto.”

Features and Benefits: Cleaning, Maintenance, and Other

Water Reservoir

The 100 oz water reservoir is removable for easy cleaning and refilling. Remove the cup tray from the top of the machine, and remove the water reservoir using the handles. Rinse with non-abrasive detergent, and refill at the tap. A water softener can be used to increase the length of time between descaling cycles.

Regular Upkeep

Use a damp cloth to keep your brew group head free of excess grounds, and use a brush to clean the shower screen and group gasket on your brew group. The portafilter’s metal filter basket and filter handle can be cleaned in warm water and non-abrasive detergent to remove excess grounds and coffee oils. When the drip tray fills, empty it and clean the drip tray and stainless steel drip tray grid with a damp cloth. The stainless steel body of the machine can also be wiped down with a damp cloth to keep it looking its best.

Accessories

Included with the Rocket Espresso Giotto are a single shot filter holder, double shot filter holder, single shot filter basket, double shot filter basket, tamper, measuring spoon, and detailed instruction manual.

Mark Jackson John, A very good machine and certainly a great looking machine as well. Here are the dimensions. 13" W x 16.5" H x 17" D. You can take 1.5 inches off the height if you remove the cup rail on top of the machine.

Nestor Gascon What type of maintenance does it need? what type of descaler would be best? and what yipe of tools and or brushes? I have had this machine for almost 2 years and I have only used a descaler twice? I only use filtered water. I also have a Rancilio Rocky Doserless Coffee Grinder and was wondering if I need to take it apart to clean it?

Mark Jackson Nestor, With the rocket is is best to be preventative. I would try to use as soft of water as possible. You should be backflushing with Cafiza at least once a week or so. You will also want a grouphead brush to help keep it clean. By filtered water do you mean softened or filtered fro taste . There is a difference. I will attach instructions on how to descale a heat exchanger. You will also want to run Grindz through your grinder to help keep it clean. You can also take it apart if you want to keep it clean. I will also put directions to do that . First the descaling - How to descale a heat exchanger machine. 1. Turn the machine on and let it heat up like you normally would. 2. When it has heated up, turn off the machine and open the hot water knob and drain the boiler until it stops. 3. Mix up a solution of warm water and the citric acids based descaler and pour it into the reservoir. 4. Turn on the machine; the pump will turn on to fill the boiler. After the boiler is full and the pump has turned off turn on the brew switch and run a cup of water through the brew group. 5. Let the machine sit while hot for 5 minutes. . 6. Turn on the brew switch and run the rest of the descaling solution through the brew group 7. Turn off the machine and open the hot water knob and drain the boiler. 8. Clean the reservoir and fill with fresh cold water then turn the machine back on and let the boiler fill with fresh water and heat up. 9 Run two cups of water through the brew group. 10. Turn off the machine and open the hot water knob to drain the boiler one last time. 11. Fill the reservoir and turn the machine on, let the boiler fill and you are ready to go. Next the Grinder cleaning for your Rocky - Rancilio Rocky SS Grinder Cleaning and Calibration Applies to: Rocky Doser, Rocky Doserless For your safety, please read through all of these directions before beginning. ALWAYS UNPLUG THE MACHINE BEFORE ATTEMPTING ANYTHING! Tools Required 1. Flat-Head Screwdriver Dis-assembly and Cleaning 2. Empty both the bean hopper and the ground coffee dispenser. 3. Locate and remove the 3 chrome flat-head screws at the bottom of the bean hopper. 4. Lift the bean hopper out the machine. 5. Removing the hopper will expose the large round brass top burr plate. Rotate it counter-clockwise until the plate is out. This will provide access to the grinding chamber. 6. Thoroughly clean the grinding chamber. This includes all of the threads, both on the top burr plate and the matching threads on the wall of the grinding chamber. Clean the burrs as well. A group brush or firm tooth brush does a good job cleaning the parts and threads in the grinding chamber. Be sure to clear the chute between the grinding chamber and the ground coffee dispenser as well. Use a vacuum to help get all of the nooks and crannies in the grinder completely clean. Calibration and Re-Assembly 1. Replace the burr plate by turning it clockwise until snug but not too tight. 2. Making sure that the machine is off, plug the machine in. 3. Find “absolute zero" on your grinder. Proper calibration of the Rocky SS grinder depends on finding absolute zero. This is the point at which the burrs first touch while spinning. It is also the point at which the Rocky SS is grinding the coffee as finely as possible. (Similar in texture to powdered sugar) The sound of the burrs touching while spinning is unmistakable. It’s a high pitched metallic “chirp” plainly audible over the sound of the Rocky SS motor. 4. Turn the machine on very briefly (2-3 seconds). If the “chirp” of the burr plates is not heard, rotate the brass top burr plate either clockwise or counter-clockwise until absolute zero is located by the telltale “chirp.” If the grinder sounds like it is winding down when you turn it off, the top burr needs to be tighter. If the grinder sound immediately stops, you have reached the absolute zero point. If you've tightened the plate as much as possible but can't make the burrs chirp, you may want to remove the plate and inspect both sets of threads for trapped grit. Even a small clump of ground coffee stuck in the wrong spot can stop you from reaching absolute zero. 5. Turn off and then unplug the machine. 6. Replace the bean hopper. The #1 or absolute zero setting should be facing front. Replace the 3 chrome flat-head screws. 7. Now turn the hopper to the number that you normally use for grinding coffee. (Note: Since you have recalibrated the grinder, the number you have been using may change slightly) 8. Pour a small amount of coffee beans into the hopper. 9. Plug in and test machine. If everything was re-assembled correctly, you've successfully cleaned and calibrated your grinder.

debbie saylor I would like to get a machine that could handle a small coffee shop setting, 10 to 40 per day, that is 110volt and has it's own resevoir. I have just read about the Rocket Giotto Premium Plus--would you suggest this machine or is there others that might be better for what I need. I would like to keep the price under $2000 and I don't require that it be a super automatic---I can grind my own beans. Thank you for any help you can offer. Debbie
