The advanced Rocket Espresso Cellini Evoluzione V2 also features a very quiet rotary pump and a commercial grade Sirai pressure stat. The pump pressure can be adjusted externally, allowing you to fine-tune extraction rates.
Robust body construction incorporating stainless steel ensures that this Rocket Espresso model will provide a life-time of quality service. Users can expect excellent performance and quality drinks from the Rocket Espresso Cellini Evoluzione V2’s E-61 brew-group, super quiet rotary pump and insulated copper boiler with long-life element.
The Rocket Espresso Cellini Evoluzione V2 has a professional quality nine-pound E-61 brew-group made of chrome plated marine brass to ensure proper heat stability. Espresso extraction is aided by a pre-infusion process to preserve coffee flavor and aroma. Hot water is constantly circulated between the boiler and brew-group to ensure proper brewing temperature. The Cellini Evoluzione V2 comes with a commercial portafilter as well as single and double-shot filter baskets.
The Rocket Espresso Cellini Evoluzione V2 has a dual pre-infusion system, consisting of a mechanical pre-infusion system with progressively working piston and a static pre-infusion chamber, resulting in consistent flavorful, aromatic, and crema-rich extractions.
Design Engineers at Rocket Espresso looked at their iconic nickel-plated brass boiler which has a legendary history of performance and found that with modern thermally efficient materials they could actually improve its performance while still maintaining its robust characteristics.
The result of their thoughtful efforts is an insulated boiler with increased heat retention and thermal stability resulting in greater energy efficiency. They also added a new 1200W element made from special long-life material (5 times longer life than normal elements).
The 1.8 liter copper boiler still retains the thick lead free brass end plates for increased heat retention – Rocket Espresso is one of the few (or only) companies to use such an endplate. And now the boiler is wrapped in a special thermal-insulating blanket.
This Rocket Espresso Cellini Evoluzione V2 model has a quiet, commercial grade rotary pump with external pressure adjustment controls, allowing users to fine tune pump pressure while viewing the dedicated pressure gauge. The internal architecture of the machine has been reconfigured increasing efficiency and further reducing pump noise creating the quietest rotary pump machine now on the market. Coupled with the Sirai commercial grade pressure stat it delivers superb temperature control and stability.
The thermosyphon system, heat-exchanger, continuously circulates hot water between the boiler and brew group to keep the machine in brew-ready condition and ensure temperature stability. The system has been carefully designed to maximize water flow (20% higher volume compared to other models). Brew-group heating is optimized by the boiler-capacity to thermo-siphon-system ratio.
The Rocket Espresso Cellini Evoluzione V2 has 2 full, round manometer displays that allow users to easily monitor both pump and boiler pressure allowing the Barista to fully understand the extraction parameters.
The commercial-grade chromed portafilter comes with single and double shot filters and baskets for your convenience.
The boiler and reservoir water levels are monitored by sensors that will alert the user if the machine needs to be refilled, and shut it off if ignored. This feature helps to prevent a dry-boil and prolong the life of the machine.
The insulated copper boiler also heats the removable cup warmer located on top of the machine. Heat is released through holes in the top of the machine, ensuring that your cups are warmed.
A dedicated control switch allows users to alternate between drawing water from the 2.9-liter reservoir or plumbed water lines. The large water reservoir is removable for easy refilling and maintenance.
Rocket Espresso’s patented cool-touch technology ensures that the steam wand is safe to use (only the nozzle gets hot). The heavy-duty wand has a two-hole tip and is engaged with a large ergonomic control knob at the top of the wand. Below the steam wand is the steam pressure gauge – the machine is at steaming pressure when the gauge measures around 1 bar. Use the steam knob to foam and steam milk, soy milk, or half and half for a cappuccino, latte, café breve, or latte macchiato.
The hot water nozzle is located to the right of the brew group and features another large ergonomic control knob like the steam wand. You can dispense hot water for tea, a café Americano, instant soup or hot chocolate, drink mixes, or hot cider.
The Rocket Espresso Cellini Evoluzione V2 comes equipped with an electronic microprocessor controlled automatic low-water-level sensor that will automatically shut off the machine to prevent a dry boiler. A warning system will also alert you when the water reservoir needs to be replenished. The water reservoir has a generous 98oz capacity and is removable for easy cleaning and refilling. Remove the cup tray from the top of the machine, and remove the water reservoir using the handles. Rinse with non-abrasive detergent, and refill at the tap. A water softener can be used to increase the length of time between descaling cycles.
Use a damp cloth to keep your brew group head free of excess grounds, and use a brush to clean the shower screen and group gasket on your brew-group. The portafilters’ metal filter-basket and filter handle can be cleaned in warm water and non-abrasive detergent to remove excess grounds and coffee oils. When the drip tray fills, empty it and clean the drip tray and stainless steel drip tray grid with a damp cloth. The stainless steel body of the machine can also be wiped down with a damp cloth to keep it looking its best.

I am wanting to know does this machine need 220 or 110 I am remodeling my kitchen and I am going to buying this machine and just want to know that I have everything it will need to run.

Just like the Ceado, this machine also runs on 110.
Hi, is the rotary pump quieter than the vibration pump when using the water canister or does the machine have to be plumbed in order to hear a sound difference?

Sanfam ♦ Lacking the oscillating "push-pull" type of motion associated with vibration pumps, rotary pump machines will nearly always be quieter than vibration pump machines, though the exact difference will vary from model-to-model and one particular use to another. Running from a water line or pulling from a tank shouldn't make a significant difference.

mjackson ♦ No there is not a downfall at all. It will be quieter and it is a great machine. I really like the rotary pump as the noise difference is appreciable.
