Following in the footsteps of its parentage, the Rocket Espresso Cellini Premium Plus V2 still features robust commercial components and stainless steel construction. Rocket Espresso has maintained its tradition of using the best components and superior materials. The Rocket Design Engineers have continued to meet the challenge of continuous improvement and have incorporated technically advanced materials and requested user interface components in the design of the Cellini Premium Plus V2.
It now has 2 Manometer display gauges for informing the user of boiler and pump pressures for finite control of the extraction process, and a special insulating blanket wrapped around the 1.8L copper boiler that produces thermal stability and reduced energy consumption. Add these changes to the commercially rated Sirai Pressure Stat, enhanced thermo siphon system, water reservoir monitoring and warning system, and a new more robust tamper and you have a recipe for pleasing the most demanding at-home Barista!
The celebrated E-61 brew group is known for delivering exceptional temperature stability. Made of chrome-plated marine brass the group is designed to create the perfect environment for espresso extraction. Hot water is constantly circulated between the boiler and brew-group to ensure proper brewing temperature.
The copper boiler has always been the heart of this machine, providing heat for brewing, steaming, and hot water. The Design Engineers at Rocket Espresso looked at their iconic nickel-plated brass boiler which has a legendary history of performance and found that with modern thermally efficient materials they could actually improve its performance while still maintaining its greatly appreciated robust characteristics. The result of their thoughtful efforts is an insulated boiler with increased heat retention and thermal stability resulting in greater energy efficiency. The 1.8 liter copper boiler retains the thick lead free brass end plates for increased heat retention – Rocket Espresso is one of the few (or only) companies to use such an endplate; however, the boiler is now wrapped in a special insulating blanket. The changes have resulted in a 30% increase in thermal stability and energy savings up to 22%!
The thermosyphon system, heat-exchanger, continuously circulates hot water between the boiler and brew group to keep the machine in brew-ready condition and ensure temperature stability. The system has been carefully designed to maximize water flow (20% higher volume compared to other models). Brew-group heating is optimized by the boiler-capacity to thermo-siphon-system ratio.
The Cellini Premium Plus V2 now has 2 full, round manometer displays that allow users to easily monitor both pump and boiler pressure allowing the Barista to fully understand the extraction parameters.
The Rocket Espresso Cellini Premium Plus V2 has a dual pre-infusion feature, consisting of a mechanical pre-infusion system and a static pre-infusion chamber, resulting in flavorful, aromatic, and crema-rich extractions.
The copper boiler also heats the removable cup warmer located on top of the machine. Heat is released through holes in the top of the machine, ensuring that your cups are heated. In close quarters you can remove the cup warmer to decrease the height of the machine, if necessary.
The commercial-grade chromed portafilter comes with single and double shot filters and baskets for your convenience.
Rocket Espresso’s patented cool-touch technology ensures that the steam wand is safe to use. The heavy-duty wand has a two-hole tip and is engaged with a large ergonomic control knob at the top of the wand. Below the steam wand is the steam pressure gauge – the machine is at steaming pressure when the gauge measures around 1 bar. Use the steam knob to foam and steam milk, soy milk, or half and half for a cappuccino, latte, café breve, or latte macchiato.
The hot water nozzle is located to the right of the brew group and features another large ergonomic control knob like the steam wand. You can dispense hot water for tea, a café americano, soup, drink mixes, or hot cider.
The Rocket Espresso Cellini Premium Plus V2 comes equipped with a low-water-level sensor that will automatically shut off the machine to prevent a dry boiler. A warning system will also alert you when the water reservoir needs to be replenished. The water reservoir has a generous 98oz capacity and is removable for easy cleaning and refilling. Remove the cup tray from the top of the machine, and remove the water reservoir using the handles. Rinse with non-abrasive detergent, and refill at the tap. A water softener can be used to increase the length of time between descaling cycles.
Use a damp cloth to keep your brew group head free of excess grounds, and use a brush to clean the shower screen and group gasket on your brew group. The portafilter’s metal filter basket and filter handle can be cleaned in warm water and non-abrasive detergent to remove excess grounds and coffee oils. When the drip tray fills, empty it and clean the drip tray and stainless steel drip tray grid with a damp cloth. The stainless steel body of the machine can also be wiped down with a damp cloth to keep it looking its best.
Included with the Rocket Espresso Cellini Premium Plus V2 are a single shot filter holder, double shot filter holder, single shot filter basket, double shot filter basket, a redesigned tamper, measuring spoon, and detailed instruction manual.

Can you help breakdown the differences between the premium plus v2 and the evolucione v2?

There are some differences. The evoluzione has the fancier side panels and also a rotary pump so it can be plumbed. Other then that there is not a lot of differences performance or engineering wise. I hope this helps. Teh Evoluzione also has a more commercial Sirai pressurestat.
What kind of voltage does this machine take. I am having my kitchen remodeled and I need to know if I need a standard US 110V or a 220V outlet near the machine I plan to buy. I am assuming it is a 110V but need clarification. Thanks

Great machine and good news. You only need a 110 outlet. I would make it a dedicated outlet for your machine. This will be sure to keep you up and running as you do not want to many things on the one circuit. It is a nice machine and will serve you well.
