Commercial E-61 Brew-Group

The Rocket Espresso Giotto Evoluzione V2 has a professional quality, nine-pound E-61 brew-group made of chrome plated marine brass to ensure proper heat stability. Espresso extraction is aided by a thorough pre-infusion process to preserve coffee flavor and aroma. Hot water is constantly circulated between the boiler and brew-group to ensure proper brewing temperature. This Rocket Espresso unit comes with a commercial portafilter as well as single and double-shot filter baskets.

Pre-Infusion

The Rocket Espresso Giotto Evoluzione V2 has a dual pre-infusion system, consisting of a mechanical pre-infusion system with progressively working piston and a static pre-infusion chamber, resulting in flavorful, aromatic, and crema-rich extractions.

Heavy-Duty Insulated Boiler

The copper boiler has always been the heart of this machine, providing heat for brewing, steaming, and hot water. The Design Engineers at Rocket Espresso looked at their iconic nickel-plated brass boiler which has a legendary history of performance and found that with modern thermally efficient materials they could actually improve its performance while still maintaining its greatly appreciated robust characteristics.

The result of their thoughtful efforts is an insulated boiler with increased heat retention and thermal stability resulting in greater energy efficiency, and a 1200W element, made from special long-life material (5 times longer than normal elements).

The 1.8 liter copper boiler retains the thick lead free brass end plates for increased heat retention – Rocket Espresso is one of the few (or only) companies to use such an endplate. And now the boiler is wrapped in a special insulating blanket.

Silent Rotary Pump

This Rocket Espresso Giotto Evoluzione V2 model has a quiet, commercial grade rotary pump with external pressure adjustment controls, allowing users to fine tune pump pressure while viewing the dedicated pressure gauge. The internal architecture of the machine has been reconfigured increasing efficiency and further reducing pump noise creating the quietest rotary pump machine now on the market. Coupled with the Sirai commercial grade pressure stat it delivers superb temperature control and stability.

Thermosyphon System

The thermosyphon system, heat-exchanger, continuously circulates hot water between the boiler and brew group to keep the machine in brew-ready condition and ensure temperature stability. The system has been carefully designed to maximize water flow (20% higher volume compared to other models). Brew-group heating is optimized by the boiler-capacity to thermo-siphon-system ratio.

Pressure Gauges

The Rocket Espresso Giotto Evoluzione V2 has 2 full, round manometer displays that allow users to easily monitor both pump and boiler pressure allowing the Barista to fully understand the extraction parameters.

Commercial Portafilter

The commercial-grade chromed portafilter comes with single and double shot filters and baskets for your convenience.

Electronic Controls

The boiler and reservoir water levels are monitored by sensors that will alert the user if the machine needs to be refilled, and shut it off if ignored. This feature helps to prevent a dry-boil and prolong the life of the machine.

Removable Cup Warmer

The copper boiler also heats the removable cup warmer located on top of the machine. Heat is released through holes in the top of the machine, ensuring that your cups are heated.

Plumbable

A dedicated control switch allows users to alternate between drawing water from the 2.9-liter reservoir or plumbed water lines. The large water reservoir is removable for easy refilling and maintenance.

No-Burn Stainless Steel Steam Wand

Rocket Espresso’s patented cool-touch technology ensures that the steam wand is safe to use (only the nozzle gets hot). The heavy-duty wand has a two-hole tip and is engaged with a large ergonomic control knob at the top of the wand. Below the steam wand is the steam pressure gauge – the machine is at steaming pressure when the gauge measures around 1 bar. Use the steam knob to foam and steam milk, soy milk, or half and half for a cappuccino, latte, café breve, or latte macchiato.

Stainless Steel Hot Water Nozzle

The hot water nozzle is located to the right of the brew group and features another large ergonomic control knob like the steam wand. You can dispense hot water for tea, a café Americano, instant soup or hot chocolate, drink mixes, or hot cider.

Water Sensor & Reservoir

The Rocket Espresso Giotto Evoluzione V2 comes equipped with an electronic microprocessor controlled automatic low-water-level sensor that will automatically shut off the machine to prevent a dry boiler. A warning system will also alert you when the water reservoir needs to be replenished. The water reservoir has a generous 98oz capacity and is removable for easy cleaning and refilling. Remove the cup tray from the top of the machine, and remove the water reservoir using the handles. Rinse with non-abrasive detergent, and refill at the tap. A water softener can be used to increase the length of time between descaling cycles.

Regular Upkeep

Use a damp cloth to keep your brew group head free of excess grounds, and use a brush to clean the shower screen and group gasket on your brew group. The portafilters’ metal filter-basket and filter handle can be cleaned in warm water and non-abrasive detergent to remove excess grounds and coffee oils. When the drip tray fills, empty it and clean the drip tray and stainless steel drip tray grid with a damp cloth. The stainless steel body of the machine can also be wiped down with a damp cloth to keep it looking its best.

It wouldn't be a stretch to say that I fell in love with Rocket Espresso machines after my dalliance with the Rocket Espresso R58 Dual Boiler machine. So, I was ecstatic this week when two new Rocket Espresso boxes turned up in my office. The Evoluzione V2 machines are the most advanced iterations of Rocket's line of Cellini and Giotto home espresso machines and I could hardly wait to get them out of the box.

For the sake of time, I wound up brewing with only one of the two machines, but that's okay because in terms of internal specs, the Cellini and Giotto are identical, Rocket being so devoted to aesthetics that the only differences between the two machines are purely cosmetic. If I had to choose between the two, I'd have to say that Giotto is the prettier machine in my opinion with all of its smooth edges and unique framework. The trade-off is that the Giotto is a bit wider and a bit more expensive than the Cellini.

I was impressed how quiet the machine was as I started making espresso. One of my favorite features of the Evoluzione V2 machines is a much quieter brewing experience due to the inclusion of a commercial rotary pump. I was happy to see that Rocket Espresso included some goodies along with the machine like a newly designed metal tamper, a microfiber cleaning cloth, and a how-to manual and DVD. There was also a group head brush, but that's not quite as exciting.

Like the Rocket Espresso R58 which uses two boilers to brew and steam, the Evoluzione V2 machines can brew and steam at the same time thanks to their heat exchanger system called a thermosyphon. While I'm not yet confident enough to try it, I'm sure many people will appreciate that capability, and they will be especially thankful for Rocket's patented cool-touch steam wands, which makes steaming safer.

On the topic of steaming, I also un-boxed Rocket's accessory set of four steam tips to play around with. For people like me, who are still getting the hang of manual steaming, experimenting with the variety of tips can be helpful. So if you find that the two-holed steam tips that come packaged with the machines aren't quite to your liking, try a variety of accessory tips. By the way, if you're really daring you might also want to try Rocket's bottomless portafilter.

Taking a look at the workings inside the machines, the Cellini and the Giotto share many similarities with Rocket's new R58 espresso machine. All three are equipped with sensors that shut the machine off if the boiler is dry, they all use the chrome plated brass E-61 brew group, they all come with commercial grade chrome plated brass portafilters, they all use commercial grade Sirai pressure stats, they all use dual pre-infusion systems, they've all got silent rotary pumps, and of course, all three machines come with an on-board water reservoir but are also plumbable to a direct fresh water source.

The boiler is one of the few places where the Evoluzione V2 machines differ from the R58. Whereas the R58 comes equipped with dual 1.7 liter 1400 Watt boilers, the Cellini and Giotto both use 1.8 liter 1200 watt heavy-duty copper boilers that come wrapped in a special heat insulating jacket for increased heat retention and thermal stability.

Really the biggest thing to consider when deciding between the Cellini and the Giotto is which one you think looks better.

The Cellini is more traditional in its shape, with flat sides and rectangular construction. The Giotto on the other hand has angular sides that extend out about half an inch from the main construction but, the base of the machine is the same size as the Cellini. The only real functional difference that results from their body construction is that the cup tray on the Giotto is slightly smaller than the Cellini. Both machines feature a pair of slick black steam and hot water knobs and a pair of black pressure gauges and are cased in stainless steel.

BlrdFX Your Cellini must be considerably more quiet than my R-58. When the R-58 is filling it's boilers the loud buzzing noise negates the reason for a "quiet rotary pump". Other than that annoying noise the Rocket is a welcome up grade from my Rancillio Silvia.
