Plumb the Giotto Evoluzione directly into a water source or use the 2.9-liter reservoir; regardless, this model is designed to function perfectly. The advanced Rocket Espresso Giotto Evoluzione also features a rotary pump. The pump pressure can be adjusted externally, allowing you to fine-tune extraction rates. As with all Rocket Espresso machines, the Giotto Evoluzione comes equipped with a commercial grade Sirai pressure stat.

A meticulously constructed body ensures that this Rocket Espresso model will be able to stand the test of time and provide years of quality service. Features and Benefits

Plumbable

A dedicated control switch allows users to alternate between drawing water from the 2.9-liter reservoir or plumbed water lines. The water tank is removable for easy refilling and maintenance.

Boiler

Created using pure copper, the boiler features a brass endplate to allow for increased heat retention (up to 40% higher than other boiler systems). The Giotto Evoluzione’s boiler is nickel plated to guard against oxidization and reduce scale buildup. Boiler pressure can be monitored using a gauge mounted on the front panel of the machine. The Giotto Evoluzione has a dedicated 1200-watt heating element to ensure quick warm-up times.

Pump

This Rocket Espresso model has a quiet, commercial grade rotary pump with external pressure adjustment controls, allowing users to fine tune pump pressure. A dedicated gauge makes it easy for users to keep track of the pump pressure.

Brewing Benefits

The Giotto Evoluzione has a professional quality, nine-pound E-61 brew group made of chrome plated brass to ensure proper heat stability. Espresso extraction is aided by a thorough pre-infusion process to preserve coffee flavor and aroma. This Rocket Espresso unit comes with a commercial portafilter as well as single and double-shot filter baskets.

Thermosyphon System

The thermosyphon system continuously circulates hot water between the boiler and brew group to keep the machine in brew-ready condition and ensure temperature stability. The system has been carefully designed to maximize water flow (20% higher volume compared to other models).

Electronic Controls

Boiler and reservoir water levels are monitored by sensors that will alert the user if the machine needs to be refilled. This feature helps to prevent a dry boil and prolong the life of the machine.

Additional Features

The Giotto Evoluzione has a commercially rated pressure switch and a removable cup warmer. In addition, both the steam wand and hot water dispenser feature no-burn technology for to ensure user safety.

Christopher J Digiuseppe Hi if I take the plastic tray off the top of the Rocket Giotto what will the total height be? How much heat/steam comes out of the cup warmer section on top? Thanks!

Mark Jackson If you take that off it is about 1 inch tall. The cup warmer is just the heat coming off the boiler. It will keep the cups warm not really hot. But it does work well and this is a great machine.

Rich Colbert Do the sensors on this machine merely 'alert' to 'help' prevent a dry boil, or do they actually shut off the boiler if it is dry?

Mark Jackson Rich, The machine will shut off the heating element if the water gets to low in the reservoir. It is a safety device and prevent damage should the boiler get to low on water. It is a very good machine. Let us know if you have any questions.

David Golembeski I'm going to buy either the Giotto Evoluzione or the Brewtus IV-R today. Which would you recommend? I know your company has a close relationship with the Expobar company, so can you give an unbiased feature by feature comparo of the two models? The Brewtus, I noticed, weighs about 20 lbs more...what is missing from the Rocket to account for the weight difference? Could you please answer today...I want to take advantange of the sale on the Baratza grinder before it expires. Thanks.

Mark Jackson David, Get the Brewtus. It has double boilers that is the main difference. We are very proud of our Expobar Brewtus and it has the potential to give you much better shots, especially if you are using the Baratza Vario. Call me if you have any questions.

Vincent Campanaro Hello, 1st line equipment has this machine for 1999.00 are you able to match or beat this price? I am interested in this one and the new Giotto premium plus, I do like the feature of hard wiring the waterline. Also would you mind giving me you experience when dealing with these machines? Are they good value for the cost, reliable or is there something else in this price range you would recommend I look at. Thank you for your help and time. I am planning to make spur haze this week. Mark Jackson Vincent, They are very good machines and certainly will give you the ability to make great espresso shots and drinks. People seem very loyal to this machine when they have purchased it. I do think they are very reliable. I would also look at our Brewtus III as it is in teh same price range and can be plumbed. It offers dual boiler technology and great value. It can make a difference in how good your shot will be consistently because of the temperature stability. Please call me if you want to discuss any of our machines. Narinder Bhalla Once the machine is plumbed, does the reservoir need to stay in the machine, should it be removed, does it matter? Depending on the answer, does the reservoir fill when the machine is plumbed? My machine has been plumbed in, but the reservoir is not filled, and I am worried about turning it on and running the pump on empty. Thanks. Narinder Bhalla

Tech Milano You can remove the reservoir once the machine is plumbed. It would not serve any purpose at that point. If you want to leave it in the machine for storage, that is fine as well, but it does not need to be filled with water.

Tech Milano The Evoluzione models have a drip tray with a removable plug in the bottom and a receptacle underneath that can be plumbed to a drain. If you do not wish to plumb it in, just leave the plug in and empty the drip tray as necessary.

Joseph Conerty Hello! I've read on more than one occasion that rotary pumps, when made to do the double duty of pulling shots and drawing water from a tank, tend to not last as long as rotary pumps with presurized, plumbed water sources. Although the basic premise of the positive pressure of a plumbed source as demanding less work from the pump sounds plausible, I was wondering if you knew if this has ever been demonstrated to actually pan out in reality. Tech Milano Pulling the water out of the tank does not put any additional stress on the pump, but the nature of the vibration pump will cause it to eventually wear out. Things like water hardness, frequency of use, and duration at pressure will effect the lifespan of the pump. The rotary pump is a heavier-duty pump made for commercial use and built to stand up to a lot more volume.

It's hard to find quality workmanship nowadays, but Milan-based Rocket Espresso delivers just that—handmade machines that look like a dream and perform even better. This brings us to the company's newest debuts, the exceedingly impressive Cellini and Giotto Evoluzione.

Water Options
Rocket Espresso considers the Evoluzione line, available in the Giotto and Cellini body styles, its most versatile range. The Evoluzione machines can be plumbed, for a professional brewing experience. If you're the type to make heavy use of your machine or if you intend to use it in an office setting, connecting to a water line may be the way to go. You won't have to worry about refilling your water tank and will always have fresh water on hand. Both the Cellini Evoluzione and Giotto Evoluzione come with 2.9-liter water reservoirs, so you also have the option of filling the machine yourself, if you prefer. There is an in-line filter that will help trap large particles, if you're drawing your water from the reservoir; otherwise you have the option of installing a water conditioning system when you plumb the machine. Unique to the Cellini Evoluzione and Giotto Evoluzione, a switch located behind the water reservoir, allows you to seamlessly alternate between using plumbed Plumblinelines or the contents water tank to steam and brew. The Evoluzione range also comes equipped with electronic controls that monitor boiler and reservoir water levels. A light, located on the front panel of the machine will flash, should the unit need to be refilled.


Additionally, the Giotto and Cellini Evoluzione have a unique drip tray that can be plumbed, so that you never have to empty it or worry about it overflowing. To plumb, simply remove the plug, located at the base of the drip tray and connect the water line (included with the machine) into the fitting. Make sure it's secure and you're all set.

Under Pressure
Built with commercial capabilities but modified to fit the household, Evoluzione machines have rotary pumps for quiet operation. A rotary machine has a distinct advantage over vibration pump units in that it builds brew pressure quicker upon startup.The design of the pump paves the way to allow users to adjust brew pressure, which Rocket Espresso takes full advantage of by integrating a screw into the base of the Giotto and Cellini Evoluzione that will enable you to make external brew pressure adjustments. Steam pressure can be modified using a separate screw, Pumplocated within the machine. Additionally, two professional grade Sirai pressure stats, mounted on the front of panel of the unit lets you easily monitor steam and brew pressure. Both the Giotto Evoluzione and Cellini Evoluzion will let you exert maximum control over brewing environment for professional results.

Some like it Hot
In addition to its impressive handling of brewing and steaming pressure, the Evoluzione line also meticulously guards against heat loss through sophisticated temperature controls. As with all Rocket Espresso models the Cellini Evoluzion and Giotto Evoluzione feature chrome-plated brass E61 brew groups and horizontally mounted, nickel-plated copper boilers with brass endplates. Pressure StatA 1200-watt heating element ensures that warm-up time is kept to a minimal and Rocket Espresso's Thermosyphon System circulates hot water throughout the entire unit to maintain optimal machine temperature. The Evoluzione line won't go cold on you; that's for sure! This heat stability is going to deliver temperature-consistent shots that rival those pulled from a commercial machine.

Thermosyphon SystemWith the Giotto Evoluzione and Cellini Evoluzione, you'll also have the option of pre-infusing your coffee to extract flavorful espresso. Simply push the handle to brew up half way if you wish to pre-infuse or lift it all the way up if you just want to extract. In addition, the unit comes with a no-burn steam wand that doubles as a hot water dispenser to allow you to create a variety of beverages from Americanos to lattes and cappuccinos. Evoluzione machines come with two portafilters, one for single-shot and the other for double-shot espresso. You'll also get a group brush, blackflush disc and coffee scoop.
