The elegant Rocket Espresso Cellini Evoluzione is a state-of-the-art semi-automatic espresso machine that offers maximum user flexibility. Plumb this unit directly into your water line or use the large 2.9-liter reservoir, the Cellini Evoluzione is equipped to handle both water sources with ease.

Commercial components including a rotary pump, chrome-plated E-61 brew group, pure copper boiler and thermosyphon system ensure temperature stability for superior espresso extraction. Also, the Cellini Evoluzione one of only a select few machines to offer externally adjustable pump pressure (letting you to change the brew bar pressure) and a commercial-grade Sirai pressure stat, allowing you to fine tune to espresso extraction rates.

Featuring professional grade construction and a stainless steel frame with four slip-resistant legs, the Cellini Evoluzione is both functional and attractive. Please note, this model is slightly more compact than its Giotto Evoluzione counterpart, measuring 13.8”Hx11.8”Wx16.7”D. The Rocket Espresso Cellini Evoluzione comes with a six month limited warranty, supported by Whole Latte Love.

Plumbable


A convenient control switch lets users alternate between using plumbed water lines or the contents of the 2.9 liter water reservoir. The tank lifts right out of the top of the machine for hassle-free maintenance and refilling.

Boiler


Like the Giotto Evoluzione, this unit has a nickel-plated copper boiler with a brass endplate to maximize heat retention. The boiler is nickel plated to lessen scale build up and prevent oxidization. Users can monitor boiler pressure using a dedicated gauge, mounted on the front panel of the Cellini Evoluzione.

Pump


The professional quality rotary pump features external pressure adjustment controls, allowing users to fine-tune pump pressure to achieve the desired brewing results. Like the boiler, pump pressure can be monitored using a gauge, located on the front of the machine.

Brewing Benefits


The Cellini Evoluzione has a nine-pound, chrome-plated marine brass E61 brew group to ensure heat stability. Rocket Espresso’s unique pre-infusion cycle helps to facilitate maximum flavor and aroma extraction with every shot. The Cellini Evoluzione comes with a commercial grade portafilter as well as one single and one double-shot filter basket.

Thermosyphon System


Hot water is continuously circulated from the boiler to the brew group to keep the unit at the proper brewing temperature and prevent heat loss. The thermosyphon system maximizes water flow and exhibits a 20% higher flow volume compared to other machines in its class.

Electronic Controls


The Cellini Evoluzione’s reservoir and boiler water levels are monitored and controlled by a set of sensors. The user will be alerted, if the boiler or water tank needs to be refilled. This feature is also designed to prevent a dry boil and ensure the integrity of the unit.

I have only two complaints of this unit – 1. the hot water wand is in the way with the on/off lever. It isn't that big of a problem, but for this kind of money it should have been designed a bit better. 2. it leaks like crazy. It is a design problem with the front platform where your shot cups or milk container sits while making your latte. The problem is the drain unit. I have the plumbable unit setup with a drain line from underneath the stage. Unfortunately the there is a plastic cup that bolts to the base of the stage, but is not sealed in anyway. Thus if the drainline becomes clogged with coffee grounds, or in my last episode I was cleaning the unit, water will overrun the plastic cup and water will go everywhere on the counter, the floor, and in the cabinet drawers. Unfortunately, you cannot see the cup because it is covered with layers of stainless steel staging pieces. It is a poor design that I cannot recommend purchase of the unit, until they redisgn the stage drain. The machine makes great coffee, but it will wreck havoc with your cabinets. Soo, check the drain system and make sure it is sealed properly.

Do you have smaller feet for the rocket cellini evo? I don't have my unit plumbed or the drain hooked up and i want to lower my machine so i can fit it under my kitchen cabinets. Thanks.

I consulted with our technical staff and we do not have any legs that will work for what you want to do. I am not sure what you can do to lower the machine safely.

I would like advice on an espresso machine for my small coffee/bookcafe. I need an espresso machine that had the NSF seal. I also would like to konw if a single port machine would be sufficient. Thank you for your time and help. Dave Campbel

What is the warm up time for this machine? I'm looking for a prosumer machine with around 15 min. from switching it on to brewing. Thanks.

The warm up time for the Cellini Evoluzione is just under 15 minutes, which seems to be the average for most of the prosumer machines with a boiler this size. Thanks, is it worth the money difference to go with the Cellini just for a rotary pump? Like the other gauge as well, would this and the rotary make it a better value?

TechMilanoItalia George, the rotary pump and brew pressure gauge are definitely excellent upgrades for the price difference. Aftermarket additions for those features can cost quite a bit more, plus the warranty will cover the parts already included from the factory (aftermarket modifications would not carry such coverage and would in fact void you warranty).

What is the BIG difference between this and Glotto Premium machine?

Also, is there a value to having a rotary pump over the more traditional vibration pump?

TechMilanoItalia The Giotto and the Cellini differ in the side panels (flared vs. flat). The vibration pump is set up just for a water tank and the rotary pump can be plumbed into a hard line or use a tank. Also, the rotary pump gives you slightly quieter operation and is a more robust design that is generally used in commercial machines.

beyond for size, what is the difference between the Cellini and the Giotto?
what type of frothing tip(s) are available?

ToddS Rand, the only difference between the two is the housing. The machine comes with a 2 hole tip but we also have a 4 hole and a 1 hole tip that will work with it. The one hole is slower but it is easier to control the amount of air that is injected with the milk. So it is great for people new to creating micro froth for latte art.
