Control Panel
The control panel consists of a row of 5 push buttons located above a row of 4 lights. The green backlit buttons have icons to designate their function – a partially filled cup for “small coffee,” a filled cup for “regular coffee,” a spoon and grounds for “pre-ground coffee selector,” drops of water for “hot water,” and pieces moving through a pipe for “descaling.” The indicator lights have icons, too – water droplets for “water tank and circuit loading,” beans and a container for “coffee bean container and dregs drawer,” an exclamation point in a triangle for “Aqua Prima filter replacement light,” and a rectangle with a line running through it for “alarm.”
Programming the Incanto Classic
Entering into programming mode allows you to set the water hardness, turn pre-brewing on and off, and rinse the machine. To enter programming mode, turn the machine off, then press the “short coffee” and “hot water” buttons simultaneously while turning the machine back on. The on/off switch is located in the back of the machine.
Pre-Brewing and Brewing
To deepen the aromas and flavor of coffee, the Incanto Classic has included a pre-brewing process. This pre-brewing step moistens the coffee gently before brewing begins. You can turn the pre-brewing step on or off by pressing the “regular coffee” button once you are in programming mode. You’ll know the machine is ready to brew when the coffee buttons are steadily backlit. Place 1 or 2 warm coffee cups beneath the brew unit, press the button of the type of coffee desired (small or regular), and the machine will begin dispensing your coffee. Press the button twice to double the amount.
Customizing your Cup Volume
To adjust the quantity of coffee dispensed into you cup, press and hold the button corresponding to the type of coffee desired. Coffee will begin dispensing, so once you reach your preferred volume, release the button. Now the machine is programmed to dispense that quantity of coffee each time it brews.
Saeco Brewing System
A simple dial located on the height adjustable coffee-dispensing spout lets you adjust the strength of your beverage – even while the machine is brewing. Turn it to the right for a strong black coffee, to the left for a café crema, or keep it centered for an espresso.
Rapid Steam Boiler System
Steam is ready in just a few seconds, and there’s no waiting between brewing and steaming with the Rapid Steam System’s stainless steel brew boiler. Switch back and forth between them, as this boiler system continuously provides water heated to the temperature you need. A boiler pressure safety valve will release steam if the boiler is in danger of overheating.
Ceramic Disc Grinder
The built-in ceramic disc grinder is safe, quiet, and long lasting. Press and turn the grind knob located in the bean hopper to one of 7 different settings – to the left for a finer grind, and to the right for a courser grind. A sealed bean hopper stores 10.5 oz of whole coffee beans. Use the included grinder brush to clean the ground coffee dispenser when necessary.
Convenient Bypass Doser
If your or your guests prefer a ground coffee blend, the bypass doser allows you to brew using ground coffee instead. Press the “pre-ground coffee selector” button, add up to 8 grams of ground coffee to the bypass doser using the included measuring spoon, and brew as you normally would. This is a great way to offer different varieties, such as decaf, to your guests.
Cup Warmer
The passive cup warmer is heated using residual heat from the stainless steel boiler. Located on the top of the machine, a sturdy metal barrier prevents your cups from sliding off. The cup warmer is a great place to store your cups, and warm cups are the best way to preserve the espresso’s temperature after brewing.

Features and Benefits: Frothing and Hot Water
Steaming
Due to the Rapid Steam boiler system, you can move quickly between brewing and steaming. A stainless steel steam wand and Pannarello attachment create thick foam and warmed steamed milk for lattes, cappuccinos and macchiatos. Open the steam knob to release steam, and after using the steam wand, remember to wipe it down with a damp cloth to prevent milk residue buildup. For more intense cleaning, unscrew the Pannarello attachment and clean.
Hot Water
The Incanto Classic’s automatic hot water dispenser is great for tea, soup, instant oatmeal, and more. To dispense hot water, place a container beneath the steam wand, press the hot water button, and turn the steam knob (located on the right side of the machine) counter-clockwise. Once you have your desired amount of water, close the knob and press the hot water button again to turn off the hot water function.

Water Filter and Descaling
The included Aqua Prima Water Filter is designed to remove impurities from your water, so that your coffee tastes its best and your brewing components stay clean. When it’s time to replace the water filter, the alarm indicator light will illuminate steadily. Using the Aqua Prima water filter increases the length of time between descaling cycles. When descaling is necessary, the descaling button will light up, and it’s only a few more steps until your machine is ready again.
Water Tank
The removable 68 oz water tank is located in the back of the machine. When the water indicator light is steadily lit, the water tank needs to be refilled. An included water hardness test strip allows you to determine the hardness of your water and program your Saeco Incanto Classic accordingly.
Regular Maintenance
When your bean hopper and grinder run low, the coffee bean indicator light illuminates steadily, and when your removable dregs drawer is filled, that same light will blink on and off. Make sure that you empty the dregs drawer while your machine is on – otherwise, the Incanto Classic won’t recognize that the drawer has been emptied. The plastic drip tray and cover are also removable for easy cleaning, and remember to use soap and water, as they are not dishwasher safe. The red water level indicator located in the center of the drip tray notifies you when the drip tray is filled.
Caring for the Brew Group
For fresh tasting espresso, it’s important to keep the brew group clean. To access the brew group, remove the drip tray cover and open the front door. Press the “push” button to release and remove the brew group. Using the included brew group key, unscrew the upper filter and wash it. Fit the filter back in place once it’s cleaned, and wash the whole unit. To replace, simply press it back into place.

Included with purchase of the Saeco Incanto Classic are a cleaning brush, brew group key, water hardness tester, pre-ground coffee scoop, cartridge filter applicator, and Aqua Prima water filter.
