The Rocket Esprsso Giotto Premium Plus V2 my question is I live in a small town of about three fifty or less would this machine be able to keep up with this small of a population as a business machine? I would get a bigger system later on down the line of course this is just get started

Re the Rocket product line, what is the difference between the Evoluzione and the Evoluzione V2. Same question for the Premium Plus line. What is the essential difference between the Premium Plus and the Evoluzione other than the rotary pump? Is this worth the price difference? I don't plan to plumb the machine to the water supply.

Michael Rosso ♦ Thomas...Thank you for your interest in the Rocket Espresso Giotto Premium Plus V2. The difference between the Evoluzione and the V2 is that the V2 isa dual boiler machine. The difference between the Premium Plus and the Evoluzione is that the Evoluzione is plumb able, they both however use same vibration pump. Thanks.

It may work if you plan on doing lets say about 30 drinks a day. If they dont all come at once. You may also need to contact your health department and permit office to see if you need a commercially approved machien with a NSF approval.This machine is not commercially rated.
