I am considering upgrading my current Gaggia TS to the GS/3. I've researched and read all I could possibly find online about the mechanical paddle. If I opted for this version of the GS/3, does this mean that each shot must be made by the use of the lever, or is a optional operation?

BaristaCorner Hello Rick...The warm up time for GS/3 is between 15 and 20 minutes for either boiler. The brew boiler is 3.5 liters and the steam boiler is 1.5 liters. It is the best machine you can get and please call me with any questions and for better pricing.Yes the paddle is the only way to brew it also controls the pre-infusion as well. I look forward to your call and I can be reached at Ext 5196. If you go with electronic version you can program in shot sizes, pre -infusion and also have the option to brew any size by not using a programmed button but by using a free flow button.It is a great machine and make sure you get a grinder that pairs well with such a great machine.
