The Rocket Espresso Giotto Premium Plus V2 continues in the tradition of constantly striving to improve the performance of the product. The Giotto Premium Plus V2 retains the high-performance chrome-plated brass E61 brew group but now also includes a much more efficient 1.8 liter thermally insulated copper boiler.
The upgrades to the Giotto Premium Plus V2 have been made with a focus on performance and user operating interface. Twin manometers, now display both pump and boiler pressure for viewing extraction parameters.

E61 Brew Group
The E61 brew group is about one thing and one thing only: heat. Proper heat, heat retention, heat stability … it’s got it all covered through its labyrinth of channels through which hot water flows, keeping everything at a consistent temperature. Its proximity to the boiler allows it to absorb radiant heat from the boiler, and the high quality metal materials hold heat well. Finally, its size as well as its material – 9 lbs, and chrome plated brass, respectively – means that it stays at a consistent temperature for long periods of time.
The Thermosyphon System, heat-exchanger, has a superior layout for optimum extraction. Unique to the Giotto Premium Plus and the Giotto Premium Plus V2, the system allows for 20% greater water-volume capacity than its peers.
Brewing on the Lever-Operated Brew Group
The E61 brew group is lever operated. Choose either the single or double shot portafilter, and measure out the correct amount of grounds using the included measuring scoop. Tamp the grounds down with the included tamper, and insert the portafilter into the group head. Lift the lever to start the pump and begin dispensing coffee, and once you have your desired amount, pull the lever all the way down until coffee dispensing stops and you hear the pump stop. Pulling the lever all the way down releases pressure from the brew group – you will probably see a small amount of water released into the drip tray from the brew group.
Heavy-Duty Insulated Boiler
The copper boiler has always been the heart of this machine, providing heat for brewing, steaming, and hot water. The Design Engineers at Rocket Espresso looked at their iconic nickel-plated brass boiler which has a legendary history of performance and found that with modern thermally efficient materials they could actually improve its performance while still maintaining its greatly appreciated robust characteristics. The result of their thoughtful efforts is an insulated boiler with increased heat retention and thermal stability resulting in greater energy efficiency. The 1.8 liter copper boiler retains the thick lead free brass end plates for increased heat retention – Rocket Espresso is one of the few (or only) companies to use such an endplate; however, the boiler is now wrapped in a special insulating blanket. The changes have resulted in a 30% increase in thermal stability and energy savings up to 22%!
The copper boiler also heats the cup warmer located on top of the machine. Heat is released through holes in the top of the machine, ensuring that your cups are heated. Brewing espresso into a cold cup causes it to lose temperature rapidly; we recommend pre-heating cups on the cup warmer or by rinsing them with hot water before brewing.
The Giotto Premium Plus V2 now has 2 full, round manometer displays that allow users to easily monitor both pump and boiler pressure allowing the Barista to fully understand the extraction parameters.
The Rocket Giotto Premium Plus V2 takes about 8 minutes to reach proper brewing pressure, and another 5 to 7 minutes for the brew group to heat fully – altogether, about a 15 minute wait. While you can technically brew once the machine is at brewing pressure, wait until the brew group is fully heated before preparing your first shot. Only then will you pull a properly heated and extracted shot.

Stainless Steel Steam Wand
The steam wand is located to the left of the E61 brew group, and employs temperature-safe anti-burn stainless steel for its construction. The knob to begin and cease steaming is located above the wand – once the machine is at brewing temperature, turn the knob to the left to release steam, and close the knob to end steaming by turning it to the right. Below the steam wand is the steam pressure gauge – the machine is at steaming pressure when the gauge measures around 1 bar. Use the steam knob to foam and steam milk, soy milk, or half and half for a cappuccino, latte, café breve, or latte macchiato. Be sure to wipe down the steam wand with a damp cloth after you’ve finished preventing any buildup.
Stainless Steel Hot Water Nozzle
The hot water nozzle is located to the right of the brew group. Made of no-burn stainless steel, you can open the knob located above the nozzle to begin dispensing hot water for tea, a café americano, or hot cider. Below the hot water nozzle is an embossed plate with the machine’s name, “Giotto.”
Features and Benefits: Cleaning, Maintenance, and Other
The 100 oz water reservoir is removable for easy cleaning and refilling. Remove the cup tray from the top of the machine, and remove the water reservoir using the handles. Rinse with non-abrasive detergent, and refill at the tap. A water softener can be used to increase the length of time between descaling cycles.
Use a damp cloth to keep your brew group head free of excess grounds, and use a brush to clean the shower screen and group gasket on your brew group. The portafilter’s metal filter basket and filter handle can be cleaned in warm water and non-abrasive detergent to remove excess grounds and coffee oils. When the drip tray fills, empty it and clean the drip tray and stainless steel drip tray grid with a damp cloth. The stainless steel body of the machine can also be wiped down with a damp cloth to keep it looking its best.
Included with the Rocket Espresso Giotto are a single shot filter holder, double shot filter holder, single shot filter basket, double shot filter basket, a redesigned tamper, measuring spoon, and detailed instruction manual.

We have purchased this machine, Rocket Espresso Giotto Premium Plus V2, and when we try to make an espresso the pump pressure gauge arrow does not go up to the green area, between 8-9 bars. It just stays at 3-4. What is the problem with it and how can we fix it? Thank you
When you backflush does the gauge go all the way up to 10 bars? If so then the machine is set to the proper pressure. I would recommend adjusting the grind to a slightly finer setting.
