Put Some Fall in Your Freezer

After reading some of Mary Ann's recent recipe blogs, I began to think that maybe I should look into a recipe of my own. With fall fast approaching and the the pumpkin spice latte's popping up at every coffee chain in town, I figured it was time to see if I could add a twist to the normal Pumpkin Spice fare.

I decided that I should come up with something different. More specifically, I decided on ice cream. With a little digging and some basic knowledge of what works in ice cream (by the way it’s everything) I gave it a go. Here is the recipe I put together for a Chocolate Chip Pumpkin Spice Latte Ice Cream.

Ingredients

  • 1 cup Semi-Sweet Chocolate Morsels
  • 1 cup milk
  • 2 cups heavy whipping cream
  • 1 cup sugar
  • 1/8 tablespoon salt
  • 2 tablespoons cornstarch
  • 4 egg yolks
  • 3 shots of espresso or 10 oz drip coffee (cooled)
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon cloves
  • 1 & ½ cups pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 & ½ tablespoons butter

Directions

    1. In a heavy saucepan, whisk together sugar, cornstarch and salt and butter. Gradually add in milk and whipping cream, stirring to maintain consistency. Keep medium heat applied for about 10 minutes, until the mixture thickens.
    2. In a separate bowl, whisk egg yolks and a pinch of cream. Add in egg yolks to the saucepan until the mixture thickens again. Continue applying heat until the mixture hits 180 degrees
    3. Remove from heat and add mixture to a glass bowl over an ice bath, letting the mixture cool for 20 minutes. Cover and refrigerate for a minimum of 4 hours
    4. Whisk the remaining ingredients: cinnamon, cloves, vanilla extract, pumpkin puree, espresso (coffee) and chocolate chips and continue whisking until ingredients are evenly distributed throughout the mixture
    5. Transfer your completed mixture into a chilled bowl on ice and churn for 10-15 minutes.
    6. Add to an airtight container and freeze until firm, or about 2 hours.

Now this recipe does take a lot of time and requires a significant number of ingredients but let me tell you, it is totally worth the effort. If you like pumpkin spice latte's, give this recipe a try. It's sure to add an interesting twist to your normal ice cream flavors.
