Fall is apple season, especially here in New York where apples are a big part of local agriculture. With an abundance of apples comes apple pie, and you’d be hard pressed to find a kitchen here in Rochester that isn’t stocked with the spices to make it. This simple syrup recipe makes perfect use of those ingredients and just one apple. Mix it in drinks for a welcome alternative to pumpkin spice or pour a little on some vanilla ice cream. Either way you’re in for a treat.

Equipment

  • Saucepan
  • Strainer
  • Mason Jar

Ingredients

  • Apple - 1-2 Large Chopped
  • Brown Sugar - 1 Cup / 200g
  • Cinnamon - 1 tsp or 1-2 Cinnamon Sticks
  • Nutmeg - ¼ tsp
  • Water - 1 Cup
  • Vanilla Extract/Bean Paste - 1 tsp

Step-by-Step Instructions

Combine Your Sugar and Water

Start by combining your water and brown sugar in a saucepan on low heat, stirring until all of the sugar has been dissolved into the water.

Core and Slice Your Apple

Remove the core and slice your apple into roughly ¾” pieces, you don’t need to remove the skin. Gently add your slices to your syrup base in the saucepan to avoid splashing.

Add Spices and and Simmer

Add your spices to the syrup. If you have full cinnamon sticks, they will be easy to strain out and will impart less of a grainy texture to your syrup. Simmer and reduce your syrup on low heat for 30 minutes, stirring occasionally.

Strain and Add Vanilla

Remove your syrup from the heat and pour through a fine mesh strainer into a mason jar. As a final step, add your vanilla to the finished syrup and stir to incorporate fully.

Keep Refrigerated, Use Within 1-2 Weeks
