Honey Lavender Cold Foam

Honey and lavender naturally pair incredibly well together. Their subtle floral sweetness is perfectly complemented by the addition of fragrant lemon zest in this delicious cold foam. Pair it with your favorite cold brew or iced coffee, preferably something light and bright. In this particular recipe we recommend using a lower fat milk like skim because the low fat content helps to maintain the foam texture for longer. Garnish with additional lavender and lemon zest for aromatics and a lively pop of color.

Ingredients
- Honey Syrup - 1 fl oz / 30 ml
- Culinary Grade Lavender - 1 Heaping Tablespoon / 15 - 18g
- Lemon Zest - ½ of 1 Medium Sized Lemon
- Lemon Extract (optional) - ¼ Teaspoon / 0.04 fl oz / 1.23 ml
- Milk (skim) - 1 Cup / 8 fl oz / 236 ml

Step-by-Step Instructions
Zest Your Lemon

Using your grater or microplane, zest of ½ of a lemon into your French press, then add your lavender.
Prepare Honey Syrup

Combine 1 fl oz / 30 ml of honey with 1 fl oz / 30 ml of water <98° F and stir gently until the honey is fully dissolved. Add the syrup to your French press and stir all of the ingredients together.
Add Milk and Froth

Pour your milk into the press and vigorously raise and lower the plunger to froth your milk until it has doubled in volume. Leave the strainer lowered, pour and serve immediately over iced coffee or cold brew. Garnish with additional lavender and lemon zest.
