Beginner's Guide to Steam Milk and Pour Latte Art

Learning how to steam milk and pour latte art can seem intimidating, but with some practice and attention to technique, you’ll be creating café-style drinks at home. This guide covers milk steaming basics, common mistakes to avoid, and a step-by-step process for pouring a simple heart design.Espresso machine with steam wandMilk frothing pitcherClean towel (for wiping wand)Pull a double shot of espresso (about 2 oz).On dual-boiler machines, you can brew espresso and steam milk at the same time.On single-boiler machines, you'll have to do one at a time. Which you do first is personal preference, but we recommend brewing first, then steaming. This prevents the microfoam from separating from the rest of the milk and makes pouring latte art easier. Add milk to your frothing pitcher until the top of the milk is at the bottom of the pitcher's pouring spout. If you're using a 12-oz pitcher, like we are in the video, this will end up being around 6-oz of milk. Caution: The steam wand and pitcher will become very hot. Handle with care to avoid burns.Purge the steam wand: Open the steam valve for about one second to clear water.Place the wand tip in the center, about ½ inch below the surface, and tilt the pitcher slightly to the left or right, whichever is comfortable for you. Turn the steam on full power and lower the pitcher slowly until you hear a gentle “ripping” sound (like paper tearing).This is air being incorporated into the milk.Once the pitcher feels warm, raise it slightly so the wand is fully submerged.Allow the milk to whirlpool, mixing and breaking down bubbles for a smooth texture.Heat the milk until about 140°F, or until the bottom of the pitcher becomes too hot to hold.Shut off the steam before removing the wand from the milk.Wipe the wand with a clean towel, and purge again.Tap the pitcher on the counter and swirl to remove any large bubbles.Large bubbles: Make sure you aren't lifting the wand too far out of the milk when adding air. This is what causes large bubbles that will be harder to incorporate into a microfoam.Milk texture is too thick: If the milk texture is closer to what you'd want for a cappuccino, then too much air is being added. Shorten the amount of time the wand tip is at the surface of the milk. Milk texture is thin or watery: This is the result of not enough air being added to the milk. Lengthen the amount of time the wand tip is at the surface of the milk.Screeching sound: The tip of the wand is too deep in the milk. Raise it higher toward the surface of the milk. This can also happen if the wand is being lowered into the milk before enough air has been added. Practice Tip: Use cold water with a drop of dish soap in your pitcher to simulate milk and reduce waste while learning. Just be sure to wipe and purge your wand before frothing milk again. Tilt your cup about 45°.Hold the pitcher ~4 inches above the cup and pour slowly into the deepest part of the espresso.This helps mix the crema and creates a blank surface.When the cup is about ⅔ full, stop pouring but keep the cup tilted.Bring the pitcher close to the surface and begin pouring faster into the center part of the cup.As the cup fills, slowly tilt it upright so the drink doesn't spillWhen the cup is nearly full, slow the pour slightly, then strike through the center of the white circle to form a heart.Beginner Tip: Rest the pitcher on the rim of the cup as a contact point while tilting—this improves stability.
