Dalla Corte XT Classic Overview

Dalla Corte’s XT Classic espresso machine pushes the boundaries of commercial technology. With unparalleled control, baristas can enjoy the flexibility of dialing in specific brew recipes on a per-group basis, all the while benefiting from the capacity of a commercial espresso machine.

Features and Performance

Enabling this sort of precise control first requires unwavering stability, starting with temperature. The Multi-Boiler System is Dalla Corte’s answer to maintaining independent brew temperature stability. Each of the XT Classic’s 54mm groups houses a 0.5 L boiler, each with its own PID and heating element. This means the water is never shared between the brew boilers or the steam boiler so each can be counted on to maintain its own unique temperature under any condition. The boilers can also be toggled on and off in the configuration of your choice.

Working with a variety of brew ratios for different beverages is a simple task thanks to the XT Classic's suite of six buttons per group. Four of the six are timed doses that can be programmed within 1/100th of a second. For your convenience, these programmed doses can be copied and saved to other buttons and groups. Each button can be programmed independently for a total of 8 - 12 unique doses. The remaining two buttons include a manual extraction button and a flush button to quickly rinse the group.

Steam power is incredible and smooth to control, as pressure can be throttled by gently depressing each of the levers. The levers can be pushed all the way down and locked in place for full pressure, freeing up your hand for other tasks. For low pressure frothing or to purge the wand, the levers can be pushed upward to release a gentle jet of steam.

Other features that round out the XT Classic’s user experience are its compatibility with Dalla Corte’s other ingenious technologies, the GCS (Grinder Control System) and MCS (Milk Control System). The GCS tethers your XT Classic to a Dalla Corte DC One or DC Two grinder, feeding them information about the flow of your espresso to automatically recalibrate your grind as necessary. The MCS is an automatic milk frothing system that can froth milk to your desired temperature, allowing your baristas to focus on other tasks. This optional feature must be requested prior to ordering.

    A centrally located touchscreen display allows for easy access to the XT Classic's intuitive programming, allowing you to specify brew length for each of the XT Classic's programmable timed brewing buttons. Programming can be copied to different buttons, and even different groups.

    The XT Classic has access to Dalla Corte's MCS (Milk Control System) and GCS (Grinder Control System) for improved productivity and work-flow. With the MCS, specify the desired milk temperature and the XT Classic will automatically heat and froth milk perfectly. With the GCS, groups can be tethered to up to one DC One and one DC Two grinder, automatically adjusting grind fineness based on deviations in extraction time.
