I think the can is well designed to be air tight.

Can't wait for this to show up at my house. Until I get a grinder I am having fun playing with pre-ground coffee and have only heard good things about this one. I have a New Baby Gaggia. Any special tips for this machine and this coffee?

First make sure you select the correct filter basket. For now I would recommend using the pressurized filter. When your grinder arrives you can switch to the non-pressurized (commercial) filter basket.
